The best authentic Italian recipes I've ever tasted or created have come from Cooking with Italians in my neighbourhood.

Keeping with traditions from various regions of Italy along with some modern and new touches,all these wonderful folks have something different and fantastic to share. From awesome pasta dishes, to simple pizza ideas, quick pan seared or roast meats, no fuss antipasti and easy sweet cookies and cakes.

Ideas and suggestions filled with easy and delicious italian recipes.

They have taught me that italian cooking can be simple and it can be fun!

And anyone of any age can cook delicious italian dishes!

Cooking great authentic italian recipes is not all that complicated.

Simple rules for true and authentic italian cuisine:
choose fresh produce, cook with ingredients in season and buy the best quality available. Whatever you can not find, you grow !

All ingredients in a dish should compliment one another and enhance the dish but should never be too overpowering.

It's best to use a little less than alot more for an even balance of flavours. Season and taste every step to ensure it's to your taste.
A common faux pas is often too much or over the top ingredients, as in GARLIC!
Yes, too much of any one ingredient can kill a dish. I love bruschetta but please. Easy on the garlic!
A light rub is all that's needed, no one wants to chomp on chunks of garlic! Although, I must confess, my dishes MAY be a little too spicy for some.
What can I say? I love peperoncino!

So get into the kitchen and get cooking some great italian food and remember............go for quality and freshness and you can never go wrong.
